Upcycled ingredients in our granola

LOCALLY SOURCED & ZERO WASTE!

Spent grain = granola base

The source: Steamworks Brewing Co., Animas Brewing Co., & Carver’s Brewing Co., (Durango, CO).

The story: Brewer’s spent grain is the soaked barley, wheat, and oats leftover from the beer brewing process. After brewers extract the sugars to make beer, what remains is a fiber- and protein-rich grain that’s typically thrown away or used as animal feed. We like to rescue this nutritious byproduct from local craft breweries and upcycle it into our spent grain granola!

Fun facts!

  • We use spent grain for its nutritional benefits, upcycling potential, and its deep, malty, graham-crackery flavor.

  • Brewer’s spent grain can be dehydrated & milled back into flour to make any grain product: bread, pasta, pizza crust, cookies, and more!

Aquafaba = granola binder

The source: LuvTempeh (Durango, CO)

The story: Aquafaba is the protein-rich liquid left over from cooking chickpeas. It’s a simple alternative to eggs or oil and works as a binder to hold our granola together. Instead of letting it go to waste, we source our aquafaba from LuvTempeh, a local tempeh maker who cooks chickpeas for their fermentation process.

Fun facts!

  • Whipped aquafaba gives our granola an undeniable crunch!

  • Aquafaba is flavorless when baked!

ginger pulp = special spice

The source: Love ‘N Juice (Durango, CO).

The story: Ginger pulp is the byproduct left over after processing ginger root in a juicer. Shelby Shakes uses it in our cha-cha-chai & seasonal apple spice flavors!

Fun facts!

  • Fresh ginger reduces inflammation & improves digestion.

  • Leftover ginger pulp makes great teas, soups, pumpkin ginger bread & more!
